Puff-paste Dainties

Ingredients

Directions

The book gives no oven temperature. The 400°F in the steps was added when the recipe was transcribed, as a starting point.

  1. Roll out puff paste to ½ inch thick and cut a circle to fit your mold.

  2. Place the mold upside down and tuck the paste around it carefully.

  3. Prick the paste all over with a fork and chill in a cold place.

  4. Find a plate or saucer that fits the top of the mold and cover it with puff paste.

  5. Cut shapes from the trimmings and brush the saucer with cold water to attach them.

  6. Chill the assembled vol au vent and lid for 30 minutes.

  7. Bake in a very hot oven (400°F/200°C) until risen and beginning to brown, turning occasionally to prevent burning.
