Why it works: Sage and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 1,445 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Baked White Fish

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Prepare a stuffing with fine bread crumbs and chopped salt pork.

  2. Season the stuffing with sage, parsley, pepper, and coarse sea salt.

  3. Fill the fish with the stuffing and sew it up.

  4. Sprinkle the outside of the fish with coarse sea salt, pepper, and bits of butter.

  5. Dredge the fish with flour and bake at 400°F (200°C) for one hour, basting often.
