Why it works: Horseradish and mustard match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 1,832 recipes. Both carry coumarin, which smells sweet, hay. The science ↓
Roast Beef
Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Wipe the meat with a wet towel, then with a dry one.
Place the meat in a dripping pan and add hot water.
Roast
Roast in a 400°F (200°C) oven for 12 minutes per pound for small roasts, or 10 minutes per pound for large roasts.
Turn the meat to brown all sides.
When done, remove to a hot platter.
Finish and serve
Pour the pan liquid into a bowl, let the fat solidify, and remove it.
Use the remaining liquid for soup stock or as a base for stew or hash.
Serve with horseradish sauce and mustard, adding the juices from the meat to each slice when serving.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

What each ingredient does
- Beef
- Forms the main body of the dish, and its fat and juices flavour the meat as it roasts.
- Hot water
- Added to the pan to create some steam and moisture around the meat while it begins to cook.
The step that matters
Turning the meat to brown all sides. Browning builds flavour through the Maillard reaction, which needs dry surfaces and direct heat. Turning exposes each side so the crust forms evenly rather than leaving pale or grey patches.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
