Braised Beef

Why it works: Clove and pepper match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 17,451 recipes. Both carry ethyl octanoate, which smells fruity, wine. The science ↓

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Bone the beef if possible.

  2. Heat a dry frying pan until very hot.

  3. Sear the meat on each side until nicely browned.

Braise

  1. Place the seared meat in a braising kettle.

  2. Add the brown stock and the onion with cloves.

  3. Season with salt and pepper.

  4. Cover closely and bake in a 350°F (175°C) oven for 40 minutes per pound.

Cool and serve

  1. Let it cool covered for a good relish when sliced.

  2. Serve with horseradish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean beef
Provides the main meat that becomes tender during slow, moist cooking.
Brown stock
Supplies liquid that keeps the meat moist and carries savoury flavour during braising.
Onion
Adds aromatic sweetness and flavour to the braising liquid.

The step that matters

Sear the meat on each side until nicely browned. Searing triggers the Maillard reaction, which builds deep brown, savoury flavour on the surface. Pale searing gives a flatter taste in the finished braise.

Swap the clove

How well each one fits the dish's main ingredients (beef, onion, pepper):

  1. Garlicfits better
  2. Thymefits better
  3. Celeryfits better
  4. Clovethe original

Fit is the average pairing score against beef, onion, pepper. Candidates are from the same food group and used in at least 100 recipes.
