Ingredients

Directions

Prepare the pork

  1. Score the skin of the pork until the knife touches the meat.

  2. Rub a mixture of bread crumbs, onion juice, grated lemon peel, lemon juice, pepper, and salt into the scored lines.

  3. Place the pork in a roaster with 1 cup of hot water underneath.

Roast

  1. Cover and bring to a steaming point, then reduce the heat.

  2. Cook for 25 minutes per pound, basting often with its own juices.

  3. Pour off the gravy 20 minutes before removing the meat.

Finish and serve

  1. Chill the meat to separate the fat.

  2. Thicken the gravy with browned flour if desired.

  3. Serve with apple sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pork roast
Provides the main meat, whose fat bastes the roast as it cooks.
Fine bread crumbs
Absorb the seasoning mixture and help hold the rubbed flavours on the surface.
Onion juice
Adds savoury, aromatic flavour to the rubbed mixture and the juices.
Browned flour
Thickens the pan gravy so it coats the meat and serving spoon.

The step that matters

Cover and bring to a steaming point, then reduce the heat.. Starting with steam and then lowering the heat helps the meat cook through gently while keeping its juices. Too high a heat can dry the outside before the centre is done.
