Chop Suey

1 bowl of rice

Ingredients

Directions

Prepare

  1. Clean the chicken and scrape the meat from the bones, cutting it into strips about 1.5 inches long and 0.5 inches wide.

  2. If using pork, cut it into strips of the same size.

  3. Slice the onion thinly, soak the mushrooms in water for 10 minutes, then remove the stems.

  4. Cut the celery into pieces 1.5 inches long and wash and slice the Chinese potatoes without cooking them.

Cook

  1. In a frying pan, heat fat and fry the chicken (or chicken and pork, or pork) until cooked but not browned.

  2. Add the sliced onions and cook briefly, then add the mushrooms.

  3. Pour enough Chinese sauce over the ingredients to brown them, then add some water and stew for a few minutes.

  4. Add the celery.

  5. After a minute, add the potatoes.

  6. Finally, add a little floured water to create gravy from the stewing liquid.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein, cooked in strips until tender and lightly firm.
Mushrooms
Add earthy flavour and a chewy texture to the stew.
Chinese potatoes
Add starch and body, thickening the stewing liquid as they soften.
Chinese sauce
Browns the ingredients and seasons the stew with savoury flavour.

The step that matters

Adding the floured water. Flour mixed with water must be stirred in while the liquid is simmering and then cooked briefly, so that the starch swells and thickens the gravy smoothly without lumps or a raw flour taste.

Swap the celery

How well each one fits the dish's main ingredients (chicken, onion, mushroom, potato, rice, sauce):

  1. Garlicfits better
  2. Thymefits about as well
  3. Celerythe original
  4. Turmericfits about as well
