Why it works: Walnut and lettuce match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 491 recipes. Both carry trans-2-hexenal, which smells green, leafy. The science ↓

Prepare the fruit and nuts

  1. Peel the oranges, removing all the white inner skin.

  2. Separate the lobes and cut each into four pieces.

  3. Scald the walnut kernels, remove the bitter skin, and let them cool and dry.

  4. Mix the orange pieces with the walnut kernels.

Chill and serve

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet oranges
Provide the main fruit body, juice and sweetness in the salad.
English walnut kernels
Add crunch and a nutty flavour that contrasts with the soft fruit.
Mayonnaise dressing
Adds richness and moisture, binding the fruit and nuts together.

The step that matters

Removing the bitter skin from the walnuts. Walnut skins contain bitter tannins, so scalding and rubbing them off before use keeps the nuts from tasting harsh against the sweet fruit.

Flavor stand-ins for the celery

The recipe marks celery as optional. How well each one fits the dish's main ingredients (orange, walnut, lettuce):

  1. Tarragonbetter flavor fit
  2. Cinnamonabout as good a flavor fit
  3. Celerythe original
  4. Thymeabout as good a flavor fit

Fit is the average pairing score against orange, walnut, lettuce. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
