Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Young carrots
Provide the main body and sweet flavour of the dish.
Butter
Adds fat for a rich mouthfeel and helps the carrots brown lightly in the pan.
White sugar
Adds sweetness and helps the carrot surfaces caramelise slightly in the butter.

The step that matters

Boil the carrots until tender before sautéing. The carrots must be fully cooked before they reach the pan, because the short sauté only warms them and browns the surface. Undercooked carrots stay firm and starchy in the centre.

Swap the carrot

How well each one fits the dish's main ingredients (butter, sugar, pepper, parsley):

  1. Carrotthe original
  2. Capsicumfits about as well
  3. Shallotfits less well
  4. Potatofits less well

Fit is the average pairing score against butter, sugar, pepper, parsley. Candidates are from the same food group and used in at least 100 recipes.
