Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Peel the mushrooms and cut off their stems.

  2. Grease a shallow baking dish.

  3. Place a layer of mushrooms, undersides up, in the dish.

  4. Pour a few drops of melted butter into each mushroom.

  5. Do not exceed two layers of mushrooms in the dish.

  6. Cover the dish and bake in a 400°F (200°C) oven for about 20 minutes until tender.

  7. Remove the cover, pour melted butter over the mushrooms, and serve hot in the baking dish.
