Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Cooks in the milk to a soft, thick mass that holds the fritters together when cut.
Milk
Cooks into the rice, giving it a creamy, tender texture and a rich body.
Eggs
Set when stirred over heat, binding the mixture so it firms up and can be cut into shapes.
Butter
Adds fat for richness and a softer, more tender bite.
Sugar
Adds sweetness and helps browning when the fritters are fried.
Orange marmalade
Adds sweetness, acidity and citrus aroma to the rice mixture.

The step that matters

Stir until the eggs are set. Eggs thicken as their proteins set with heat. Stopping too early leaves the mixture loose, so it will not hold its shape when cold and cut. Overcooking can make it grainy or rubbery.

Swap the orange

How well each one fits the dish's main ingredients (rice, milk, butter, sugar, egg, apple):

  1. Vanillafits better
  2. Figfits better
  3. Peachfits better
  4. Orangethe original

Fit is the average pairing score against rice, milk, butter, sugar, egg, apple. Candidates are from the same food group and used in at least 100 recipes.
