Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Scald the milk and butter together until lukewarm.

  2. Dissolve the yeast in warm water.

  3. Add the dissolved yeast to the milk mixture along with sifted cornmeal and salt.

  4. Stir well and beat for a few minutes.

  5. Set aside in a warm place to rise overnight.

  6. In the morning, add a well-beaten egg to the mixture.

Shape and bake

  1. Grease gem tins.

  2. Fill the tins half full with the batter.

  3. Let the muffins rise until light.

  4. Bake in a hot oven at 400°F (200°C) until golden.

  5. Serve hot in a napkin.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cornmeal
Provides the main structure and the characteristic grainy, crumbly texture of the muffins.
Milk
Adds moisture and softness and helps the batter hold together.
Butter
Adds fat for richness and a tender crumb.
Yeast
Produces gas during the overnight rise, making the batter light and airy.
Egg
Adds structure and richness and helps bind the batter.

The step that matters

Overnight rise in a warm place. The yeast needs a warm, steady environment to ferment slowly. If the batter is too cold it rises poorly, and if it is too warm it can over-ferment and turn sour or collapse, so the muffins end up dense or flat.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
