Why it works: Vanilla and almond match in chemistry and in kitchens. They rank in the top 4% of all ingredient pairs, and cooks put them together in 3,961 recipes. Both carry eucalyptol, which smells eucalyptus, herbal. The science ↓

Almond Cream Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the cake

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, mix powdered sugar, sweet milk, flour, butter, beaten egg whites, baking powder, and vanilla extract until smooth.

  3. Divide the batter evenly into four greased cake tins.

  4. Bake for 25-30 minutes or until a toothpick comes out clean.

Make the almond cream

  1. While the cake cools, whip the sweet cream until frothy.

  2. Gradually stir in ½ cup powdered sugar, a few drops of vanilla extract, and chopped almonds.

Assemble and frost

  1. Spread the almond cream thickly between the layers of cake.

  2. Frost the top and sides of the cake with any remaining almond cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten whites trap air, giving the cake lift and a light, airy crumb.
All-purpose flour
Provides the starch and structure that hold the cake together once baked.
Butter
Adds fat for tenderness and a richer flavor in the crumb.
Baking powder
Releases gas during baking, helping the cake rise.
Sweet cream
Whipped, it forms a light, moist cream that adds richness between the layers.
Almonds
Add nutty flavor and a pleasant texture to the almond cream.

The step that matters

Whip the sweet cream until frothy. Cream that is under-whipped stays thin and runny, so it will not hold between the layers. Stop at frothy and stir in the sugar gradually so the cream keeps its body.
