Tutti-frutti Ice Cream

Ingredients

Directions

Make the custard base

  1. In a chilled bowl, beat the egg whites until frothy.

  2. Add powdered sugar and cream mixed with baking soda, and heat in a double boiler until scalding hot but not boiling.

  3. Set the inner saucepan in ice and churn until cold and light.

  4. Pour the mixture into a freezer and churn until slightly frozen.

Add the fruit and freeze

  1. Mix all the diced fruits together in a bowl.

  2. When the cream is frozen but not too stiff, remove the churner and add the mixed fruits.

  3. Stir the fruits into the cream with a long-handled spoon, pressing down firmly.

  4. Cover the freezer and pack it in ice and salt for 3 more hours.

What each ingredient does

Egg whites
Whipped to a foam, they add air and a light, airy texture to the ice cream.
Powdered sugar
Sweetens the base and softens the freezing texture by lowering the freezing point.
Rich cream
Adds fat, which gives the ice cream a smooth, rich mouthfeel.
Baking soda
Raises the pH of the cream slightly, which is said to help keep its color and texture stable.
Peaches
Provide fruit flavor and moisture that becomes part of the frozen texture.

The step that matters

Adding the fruit at the right stiffness. If the cream is too soft, the fruit sinks and the mixture turns watery; if it is too stiff, the fruit won't mix in evenly. Pressing firmly folds the pieces through the partly frozen base so they stay distributed as it freezes.

Swap the orange

How well each one fits the dish's main ingredients (egg, sugar, cream, peach, apple, banana):

  1. Vanillafits better
  2. Strawberryfits better
  3. Pearfits better
  4. Orangethe original

Fit is the average pairing score against egg, sugar, cream, peach, apple, banana. Candidates are from the same food group and used in at least 100 recipes.
