What each ingredient does

Ground coffee
Provides the flavour compounds that the hot water extracts into the brew.
Boiling water
Extracts flavour from the coffee grounds and carries them into the cup.

The step that matters

Do not boil the coffee. Boiling coffee over-extracts bitter compounds and can make it taste harsh. Keeping it just below boiling gives a smoother, more balanced cup.
