What each ingredient does

Ground coffee
Provides the main flavour and aroma that the hot water extracts.
Eggshell
Its fine particles bind to loose grounds as they settle, clearing the liquid.

The step that matters

Stir in the crushed eggshell mixed with cold water. The eggshell must be evenly dispersed in the cold water before it goes in, so it can gather the fine grounds. Adding it clumped or while the coffee is still boiling can leave the cup cloudy.
