Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the ice and helps keep it from freezing into a solid block.
Orange juice
Provides the main flavour and liquid base of the ice.
Egg whites
Whipped into the mixture to add air and a lighter texture.
Gelatin
Sets the mixture to give a firmer texture.

The step that matters

Fold in the beaten egg whites. Egg whites hold air only when beaten to stiff foam; if they are deflated or overmixed, the ice loses its lightness. Folding gently keeps the air in.

Swap the orange

How well each one fits the dish's main ingredients (sugar, lemon, egg, gelatin):

  1. Vanillafits about as well
  2. Orangethe original
  3. Raspberryfits less well
  4. Raisinfits less well

Fit is the average pairing score against sugar, lemon, egg, gelatin. Candidates are from the same food group and used in at least 100 recipes.
