Why it works: Cabbage and pepper are a kitchen classic. They rank in the top 5% of all ingredient pairs, and cooks put them together in 4,081 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓
An Excellent Way of Boiling Cabbage
Ingredients
Directions
Prepare
Trim and wash the cabbage in cold water, checking for insects.
Cut the cabbage into quarters, leaving the stem intact, and soak in cold water for 1 hour.
Boil
Boil a pot of water with salt, then add the cabbage and boil for 1.5 hours, skimming occasionally.
Drain the cabbage in a colander and cool it under running cold water until completely cold.
Wash the pot, refill it with water, and bring it to a boil again.
Add the cabbage to the boiling water and cook for 2 to 2.5 hours until tender.
Finish and serve
Drain the cabbage again, pressing it to remove moisture, and cut it into quarters.
Add bits of fresh butter and a little pepper, cover, and serve hot.

What each ingredient does
- Cabbage
- Forms the tender body of the dish, becoming soft through long simmering.
- Fresh butter
- Adds fat and richness to the cooked cabbage, carrying flavour and a silky mouthfeel.
The step that matters
Cooling the cabbage under cold water before the second boil. Rinsing the partly cooked cabbage in cold water stops it cooking further and helps it keep its shape and colour during the long second boil.
Swap the cabbage
How well each one fits the dish's main ingredients (butter, pepper):
- Capsicumfits better
- Potatofits better
- Carrotfits about as well
- Cabbagethe original
Fit is the average pairing score against butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
