Tomatoes Stuffed with Sardines

Oven, in the book's wordsA moderately hot oven

Ingredients

Directions

The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Scoop out the insides of the tomatoes and let the juice drain from the pulp.

  2. Mix the pulp with the bread crumbs, sardines, melted butter, chopped olives, salt, and cayenne pepper.

Stuff and bake

  1. Stuff the tomatoes with the mixture and cover with the tops you removed.

  2. Place the tomatoes in a pan, cover with another pan, and cook for 30 minutes in a 350°F (175°C) oven.

  3. Uncover and brown the tops before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Firm tomato shells hold the filling and soften gently as they bake.
Sardines
Provide the main savory, oily flavor and richness in the filling.
Cracker or bread crumbs
Absorb the tomato juice and moisture so the filling holds together.
Melted butter
Adds fat for richness and helps the top brown when uncovered.
Olives
Add salty, briny flavor that contrasts with the rich sardines.

The step that matters

Draining the tomato pulp. Letting the juice drain keeps excess liquid out of the filling, so it stays thick and does not make the tomato shells watery or soggy during baking.

Swap the tomato

How well each one fits the dish's main ingredients (bread, butter, olive, pepper):

  1. Tomatothe original
  2. Capsicumfits about as well
  3. Potatofits less well
  4. Spinachfits less well

Fit is the average pairing score against bread, butter, olive, pepper. Candidates are from the same food group and used in at least 100 recipes.
