What each ingredient does

Chestnuts
Provide the starchy, soft body of the filling once boiled and mashed.
Butter
Adds richness and moisture, keeping the mashed filling soft and flavorful.
Beaten raw egg
Binds the mashed filling and helps it set firm as it bakes.
Hard boiled egg
Adds body and a firmer, crumbly texture to the filling.

The step that matters

Boiling the chestnuts until soft. Chestnuts must be fully softened so they mash smoothly into the filling; undercooked chestnuts stay firm and grainy, and the filling will not blend or bake evenly.
