Oyster Loaf

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the bread

  1. Cut off the top of the bread loaf to use as a cover and scoop out the soft part.

  2. Place the bread shell in a 400°F (200°C) oven to heat.

Fry the oysters and mushrooms

  1. Dip the oysters in beaten eggs, then coat the oysters with cracker crumbs.

  2. Fry the oysters until brown.

  3. Season the oysters with coarse sea salt and black pepper to taste.

  4. Fry or broil the mushrooms until cooked.

Assemble and serve

  1. Layer the fried oysters and mushrooms in the hot bread loaf.

  2. Slice olives or pickles and place them on top of the loaf.

  3. Put the cover back on the loaf.

  4. Serve immediately while hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Main filling that becomes tender and savory when fried in a crumb coating.
Eggs
Bind the cracker crumbs to the oysters so the coating adheres during frying.
Cracker crumbs
Form a crisp, browned coating that contrasts with the soft oysters.
Mushrooms
Add moisture and savory, earthy flavor to the filling.
Bread loaf
Serves as a hollow edible shell that holds and carries the filling.

The step that matters

Fry the oysters until brown. Oysters overcook quickly and turn rubbery; a short fry in hot fat sets the crumb coating and keeps the oyster centers tender.
