Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the clams

  1. Wash the clams and place them in a drip pan in a hot oven at 400°F (200°C) until the shells open.

  2. Remove the clams, separate the meat, and chop it finely.

Fill and bake

  1. Mix the chopped clams with the bread crumbs, clam juice, and pepper.

  2. Butter the clam shells and fill them with the mixture.

  3. Top each filled shell with a small bit of butter and a few bread crumbs.

  4. Bake for 10 minutes.

What each ingredient does

Clams
Provide the main body of the filling, with savory, briny flavor.
Bread crumbs
Absorb the clam juice and give the filling body and a light texture.
Clam juice
Adds moisture and concentrated seafood flavor to the filling.
Butter
Adds fat for richness and helps the topping brown in the oven.
