What each ingredient does

Gelatine
Sets the fish stock into a firm, clear jelly that holds the fish in shape.
Fish stock
Carries the flavour of the fish and becomes the liquid that the gelatine sets.
White fish
Provides the main protein, which is cooked through and then set in the jelly.

The step that matters

Soaking the gelatine before adding hot stock. Gelatine must first hydrate in cool liquid so its strands separate; adding it dry or to very hot liquid can leave lumps and weaken the set.

Swap the white pepper

How well each one fits the dish's main ingredients (fish, lettuce, sauce):

  1. Capersfits better
  2. Tarragonfits better
  3. Parsleyfits better
  4. White pepperthe original

Fit is the average pairing score against fish, lettuce, sauce. Candidates are from the same food group and used in at least 100 recipes.
