Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the meat

  1. Chop the round steak very fine using a chopping knife.

  2. Chop the pork tenderloin and suet, then mix them well and let stand overnight.

Mix and bake

  1. Grate the onion and add it to the meat mixture along with the spices.

  2. Stir in the milk gradually, ensuring the mixture remains smooth.

  3. Pour the mixture into a buttered tin and bake for 1 hour in a 400°F (200°C) oven, placing the tin in a pan of boiling water.

What each ingredient does

Round steak
Forms the main body of the loaf, giving it substance and a firm, sliceable structure.
Beef suet
Adds fat that melts during baking, keeping the loaf moist and rich.
Pork tenderloin
Contributes extra meat and moisture, softening the texture of the finely chopped mixture.
Milk
Adds moisture that keeps the loaf tender as the proteins set during baking.
Onion
Adds moisture and savory aroma that flavors the meat through the loaf.
Flour
Helps bind the mixture and thicken the liquid so the loaf holds together.

The step that matters

Place the tin in a pan of boiling water. The water bath moderates the oven heat, so the meat cooks gently and stays moist rather than drying out or toughening at the edges.

Swap the onion

How well each one fits the dish's main ingredients (pork, beef, pepper, flour, allspice, clove, milk):
