Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Pass the veal and salt pork through a meat grinder.

  2. In a large bowl, mix the ground meat with crushed crackers, butter, beaten eggs, salt, pepper, sage, celery extract, and onion until well combined.

  3. Pack the mixture tightly into a deep tin baking dish.

  4. Dot the top with small pieces of butter and sprinkle with cracker crumbs.

Bake and serve

  1. Cover with another tin and bake at 350°F (175°C) for 2 hours.

  2. Remove the cover and bake until browned.

What each ingredient does

Veal
Forms the bulk of the loaf and sets into a firm, sliceable structure when cooked.
Salt pork
Adds fat and moisture, keeping the lean meat from drying out during baking.
Crackers
Absorb juices and help bind the ground meat so the loaf holds its shape.
Eggs
Bind the mixture together and help it set firmly as it bakes.
Butter
Adds richness and moisture and helps the top brown during baking.

The step that matters

Covering the loaf for the first baking. The lid traps steam so the dense meat cooks through gently and stays moist. Browning only comes after the cover is removed, so the uncovered stage should not be rushed.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (veal, pork, butter, egg, pepper, sage, celery):

  1. Capsicumfits better
  2. Carrotfits better
  3. Potatofits better
  4. Onionthe original

Fit is the average pairing score against veal, pork, butter, egg, pepper, sage, celery. Candidates are from the same food group and used in at least 100 recipes.
