What each ingredient does

Veal
Thin slices wrap the filling and become tender and mild during simmering.
Salt pork
Adds fat and moisture to the filling, keeping it juicy as it cooks.
Cracker crumbs
Absorb moisture and give the filling body so it holds together.
Egg
Binds the filling so it stays cohesive when sliced and cooked.
Butter
Conducts heat for frying and promotes browning on the outside of the rolls.
Cream
Forms a rich simmering liquid that softens the rolls and adds richness.

The step that matters

Fry the rolls in hot butter until golden brown. Hot butter sears the flour-dusted surface, browning it through Maillard reactions and helping the rolls hold their shape. Frying in cool butter causes the rolls to soak up fat and fall apart.
