Why it works: Carrot and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 8,053 recipes. Both carry 2,4-decadienal, which smells seaweed. The science ↓
Veal Jelly
Ingredients
Directions
Prepare the veal
Break the knuckle into pieces and place in a saucepan with enough water to cover.
Tie the onion, carrot, parsley, mace, cinnamon, cloves, and thyme in a muslin bag and add it to the veal.
Cook slowly for 4 hours.
Make the jelly
Remove the meat, discard the bones and fat, and cut it into pieces.
Strain the cooking liquid over the meat.
Add salt, pepper, and lemon juice, then simmer for 30 minutes.
Set and serve
Arrange slices of cold boiled egg in a mold, pour in the veal mixture, and set in a cold place to harden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Knuckle veal
- Breaks down during long simmering to release gelatin that lets the liquid set into jelly.
- Eggs
- Hard boiled slices add firm texture and a mild flavor contrast inside the set jelly.
- Lemon juice
- Adds acidity that brightens the flavor and balances the rich meat broth.
The step that matters
Setting the jelly in a cold place. The jelly sets only if the cooking liquid has enough gelatin and is chilled slowly and undisturbed. Moving or warming the mold can stop it from firming properly.
Swap the mace
How well each one fits the dish's main ingredients (veal, egg, lemon, onion, carrot, parsley, cinnamon):
- Marjoramfits better
- Thymefits better
- Nutmegfits better
- Macethe original
Fit is the average pairing score against veal, egg, lemon, onion, carrot, parsley, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
