Why it works: Raisin and flour match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 9,075 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Mock Cherry Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine cranberries, raisins, boiling water, sugar, flour, and vanilla. Mix well until combined.

  3. Pour the filling into one pie crust.

Assemble and bake

  1. Cover with the second pie crust and seal the edges.

  2. Cut slits in the top crust to allow steam to escape.

  3. Bake for 30-35 minutes or until the crust is golden brown.

Sugar and vanilla barely smell alike, yet cooks put them together in 35,032 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cranberries
Provide the tart, fruity flavour that stands in for cherries in this pie.
Raisins
Add chewy texture and concentrated sweetness to the filling.
Sugar
Sweetens the filling and helps it thicken and set as it bakes.
Flour
Thickens the juices released by the fruit so the filling sets rather than running.

The step that matters

Cut slits in the top crust. Slits let steam escape during baking. Without them, trapped steam builds pressure, can split the crust, and makes the filling wetter than intended.
