Vatican Punch

Ingredients

Directions

Prepare the juices

  1. Grate the pineapples and strain the juice.

  2. Pare the lemons, removing all pith; wash, crush, and strain the juice.

Make the punch base

  1. Make a syrup by dissolving the sugar in the water, then add the pineapple juice and freeze.

  2. Beat the egg whites until stiff, adding 1 tablespoon of sugar for each egg and the lemon juice.

  3. Pour the egg mixture into the freezer with the pineapple mixture and mix thoroughly.

Finish and serve

  1. Before serving, add ⅓ cup of rum for each quart of the mixture and ½ pint of champagne for every 2 quarts.

  2. Return to the freezer and chill before serving.

What each ingredient does

Pineapples
Supply the main fruit flavor, sweetness, and juice for the punch base.
Lemons
Add acidity that balances the sweetness and brightens the flavor.
Sugar
Sweetens the punch and dissolves into the syrup that forms the base.
Egg whites
Whipped to stiff foam, they add lightness and a smooth, airy texture to the frozen mixture.
Rum
Adds aroma and flavor, and its alcohol keeps the frozen mixture from freezing solid.
Champagne
Adds sparkle, dryness, and a light fruity aroma to the finished punch.

The step that matters

Beating the egg whites until stiff. Whites must be beaten until they hold firm peaks, with sugar stabilizing the foam. Under-whipped whites collapse when mixed in, leaving the punch dense instead of light and smooth.
