Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Forms the candy's sweet base and, as it cooks, sets into a firm, smooth texture.
Vinegar
Acidity helps prevent the sugar from crystallizing too coarsely, keeping the candy smooth.
Butter
Adds fat for a richer flavor and a softer, creamier bite.

The step that matters

Cook without stirring until a soft ball forms. Stirring while the sugar syrup cooks can trigger large sugar crystals, making the candy grainy. Testing a spoonful in cold water shows when the syrup has reached the right concentration for a soft, creamy set.

Swap the walnut

How well each one fits the dish's main ingredients (sugar, vinegar, butter, vanilla):

  1. Almondfits better
  2. Chestnutfits better
  3. Hazelnutfits better
  4. Walnutthe original

Fit is the average pairing score against sugar, vinegar, butter, vanilla. Candidates are from the same food group and used in at least 100 recipes.
