What each ingredient does

Red raspberries
Provide the main flavor and color, and their juice forms the base of the vinegar.
Vinegar
Extracts flavor from the raspberries and gives the finished drink its tartness.
Sugar
Sweetens the juice and, when boiled, thickens it into a syrup that helps preserve it.

The step that matters

Boiling the juice with sugar. Boiling the juice with sugar concentrates the mixture into a syrup. Too short a boil leaves it thin and less stable for long storage, so the full 20 minutes matters.
