Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓
Quenelles of Veal
Ingredients
Directions
Melt 3 oz of butter in a saucepan and mix in 2 oz of flour with a wooden spoon.
Add ½ pint of second white stock and stir until it boils and thickens.
Pour the mixture onto a plate and let it cool.
Trim the skin and fat from 1 lb of veal and cut it into small pieces.
Pound the veal pieces in a mortar until smooth.
Pass the pounded meat through a wire sieve into the cooled mixture.
In the mortar, combine half of the mixture with 1 egg and pound to a cream.
Add half of the veal, salt, and pepper, and pound well together.
Incorporate the remaining mixture, add another egg, and the rest of the veal, and pound again.
Transfer the mixture to a basin.
