Braised Fillets of Beef

Ingredients

Directions

  1. Cut the fillet of beef into small round fillets, about the size of a breakfast cup and ¾ inch thick.

  2. Cut the bacon into strips, 1 inch long and ⅛ inch wide.

  3. Hold each fillet in a clean cloth and lard it with the bacon strips in regular rows until one side is covered.

  4. Place the larded fillets in a clean sauté pan.

  5. Add the bouquet garni, consisting of parsley, thyme, and bay leaf, tied together.

  6. Scrape and halve the carrots, peel the onion, and add these vegetables along with ¼ stick of celery to the sauté pan.

  7. Pour in 1 pint of good stock.
