Why it works: Thyme and marjoram match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 2,225 recipes. Both carry terpineol, which smells pine, woody. The science ↓

Baked Stuffed Haddock

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the stuffing

  1. Clean the haddock in cold water and dry it with a cloth.

  2. Grate the bread crumbs into a bowl.

  3. Wash and dry the parsley, then chop it finely.

  4. Chop the thyme and marjoram finely, discarding the stalks.

  5. Mix the herbs with 2 tablespoons of bread crumbs.

  6. Add pepper and salt to taste, then mix in the suet.

Stuff and coat the fish

  1. Stuff the belly of the haddock with the stuffing and sew it up.

  2. Beat the egg in a plate and brush it over the fish.

  3. Roll the fish in the remaining bread crumbs to coat it well.

Bake

  1. Grease a baking dish with dripping and place the fish inside.

  2. Bake in a preheated oven at 350°F (175°C) for 30 to 45 minutes, basting frequently with dripping.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Haddock
Forms the main body of the dish, cooked whole and gently moistened during baking.
Bread crumbs
Form the stuffing and crisp coating, adding structure and a golden surface when baked.
Egg
Binds the crumb coating to the fish so it adheres and browns during baking.
Suet
Adds fat to the stuffing, keeping it moist and rich as it cooks.

The step that matters

Basting the fish with dripping. Fish is lean and dries out quickly in the oven. Regular basting with fat keeps the flesh moist and helps the coating brown evenly.
