Pickled Cabbage

Ingredients

Directions

Prepare the cabbage

  1. Cut the red cabbage in half and remove the stalk.

  2. Wash the cabbage well in salt and cold water.

  3. Slice the cabbage thinly.

  4. Lay the slices in a large pan and sprinkle a handful of salt over each layer of slices.

  5. Cover the top with salt.

  6. Leave for two days, turning the slices morning and evening and adding more salt each time.

  7. Drain the slices on a sieve for one day.

Make the spiced vinegar

  1. Combine the vinegar, mace, cloves, allspice, peppercorns, and ginger in a saucepan and bring the mixture to a boil.

  2. Pour the vinegar and spices into a broad pan to cool.

Pickle and store

  1. Place the cabbage in a stone jar.

  2. Pour the cooled vinegar and spices over the cabbage, ensuring it is fully covered.

  3. As the cabbage soaks up the vinegar, add more vinegar as needed.

  4. Seal the jar with wash leather, brown paper, or a bladder.

What each ingredient does

Red cabbage
Forms the bulk of the pickle and, once salted and drained, becomes crisp and ready to absorb the vinegar.
Coarse sea salt
Draws water out of the cabbage through osmosis, firming the slices and seasoning them before pickling.
Vinegar
Provides the acidity that preserves the cabbage and gives the pickle its sharp flavour.
Cloves
Adds warm, aromatic spice flavour to the pickling liquid.
Allspice berries
Contributes warm, aromatic spice flavour to the pickling liquid.
Ginger
Adds a warm, pungent aroma to the spiced vinegar.

The step that matters

Salting and draining the cabbage. Salt must be applied evenly and the slices fully drained; too little salt or draining leaves excess water, diluting the vinegar and letting the cabbage spoil or pickle unevenly.

Swap the mace

How well each one fits the dish's main ingredients (cabbage, vinegar, clove, allspice, ginger):

  1. Cinnamonfits better
  2. Turmericfits better
  3. Nutmegfits better
  4. Macethe original

Fit is the average pairing score against cabbage, vinegar, clove, allspice, ginger. Candidates are from the same food group and used in at least 100 recipes.
