Beef Olives

Ingredients

Directions

Prepare the beef

  1. Place the beef on a cutting board and slice it into pieces about ½ inch thick and 4 inches long.

  2. Use a wet cutlet bat to flatten the slices evenly.

  3. Finely chop the trimmings and place them in a bowl.

Make the stuffing

  1. Chop the beef suet very finely after removing the skin.

  2. Rub the bread through a wire sieve to obtain 3 ounces of bread crumbs.

  3. Finely chop the parsley, thyme, and marjoram.

  4. Combine the suet, bread crumbs, parsley, thyme, and marjoram with the chopped beef in the bowl.

  5. Grate the lemon rind and add it along with nutmeg to the mixture.

  6. Season with salt and pepper, then mix in the egg.

Cook

  1. Shape the mixture into rolls and cook in brown sauce or stock.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Forms the main body of the olives and gives meaty flavor and chew.
Beef suet
Adds fat that keeps the filling moist and tender during cooking.
Bread crumbs
Absorb juices and help bind the filling so it holds its shape.
Egg
Binds the stuffing together so the rolls hold their shape.

The step that matters

Shape the mixture into rolls and cook in brown sauce or stock.. The rolls must be firmly shaped and kept at a gentle simmer, not a hard boil, so the filling holds together and the beef stays tender rather than tough.
