Ingredients

Directions

  1. Wash half a calf's head in water to remove blood and impurities.

  2. Cut the flesh from the bones and tie it in a clean cloth.

  3. Place the flesh, bones, and 4 quarts of cold water in a large stewpan with ½ tablespoon salt.

  4. Bring the stewpan to a boil over heat.

  5. Once boiling, skim the surface and reduce heat to simmer for 3 hours, skimming occasionally.

  6. Remove the calf's head and strain the stock.
