Vanilla Souffle
Ingredients
Directions
Prepare a 1½ pint tin by buttering it well inside.
Fold a piece of paper to make a band around the tin, allowing 2 inches to stand above the tin.
Butter the part of the paper above the tin and tie it on with string.
Melt 1 oz. of butter in a saucepan over low heat.
Remove the saucepan from the heat and mix in 1 oz. of flour until well combined.
Add 2 teaspoons of sugar and ½ cup of milk, stirring until smooth.
Return the saucepan to the heat and stir until the mixture thickens.
Remove from heat and add the yolks of 3 eggs, mixing well.
