Pickled Cabbage

Ingredients

Directions

Prepare the cabbage

  1. Cut the red cabbage in half, remove the stalk, and wash it well in salt and cold water.

  2. Slice the cabbage thinly and lay the slices in a large pan.

  3. Sprinkle a handful of salt over each layer of slices and cover the top well with salt.

  4. Leave the salted cabbage for two days, turning the slices morning and evening and adding more salt each time.

  5. Drain the slices on a sieve for one day.

Make the spiced vinegar

  1. In a saucepan, combine the vinegar, mace, cloves, allspice, peppercorns, and ginger.

  2. Bring the mixture to a boil.

  3. Pour the vinegar and spices into a broad pan to cool.

Pickle and store

  1. Place the cabbage in a stone jar and pour the cooled vinegar and spices over it, ensuring the cabbage is fully covered.

  2. As the cabbage soaks up the vinegar, add more vinegar as needed.

  3. Seal the jar with wash leather, brown paper, or a bladder. The pickle is now ready for use.

What each ingredient does

Red cabbage
Forms the bulk of the pickle and absorbs the salt and vinegar as it softens.
Coarse sea salt
Draws water out of the cabbage slices, firming them and letting them take up the vinegar.
Vinegar
Provides the acidity that preserves the cabbage and gives the pickle its sharp flavour.
Cloves
Adds warm, aromatic spice flavour to the pickling liquid.
Allspice berries
Adds warm, aromatic spice flavour to the pickling liquid.
Ginger
Adds a pungent, aromatic note to the pickling liquid.

The step that matters

Salting and draining the cabbage. Salt draws water out of the cabbage slices, so they soften less and stay crisp. Enough salt, applied evenly over each layer, is needed for the cabbage to pickle safely and keep its texture.

Swap the mace

How well each one fits the dish's main ingredients (cabbage, vinegar, clove, allspice, ginger):

  1. Cinnamonfits better
  2. Turmericfits better
  3. Nutmegfits better
  4. Macethe original

Fit is the average pairing score against cabbage, vinegar, clove, allspice, ginger. Candidates are from the same food group and used in at least 100 recipes.
