Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Melt 2 oz. of butter in a saucepan.

  2. In a bowl, combine ½ lb. of flour and 1 oz. of caster sugar with the melted butter.

  3. Mix the ingredients well.

  4. Flour a board and turn the mixture out onto it.

  5. Flour your hands and knead the mixture well.

  6. Flour a rolling pin and roll out the dough to about ⅓ inch thick.

  7. Flour a knife and cut the dough into oval shapes.

Bake and serve

  1. Grease a baking tin with butter.

  2. Place the shortbread on the tin and bake in a 400°F (200°C) oven until pale brown.

  3. Remove from the oven and let cool before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Provides the structure that holds the dough together as it bakes.
Butter
Adds fat and richness, giving the shortbread its tender, crumbly texture.
Caster sugar
Adds sweetness and helps the shortbread take on a pale golden browning.

The step that matters

Knead the mixture well. Kneading develops the dough evenly so the shortbread bakes uniformly. Under-mixed dough can be crumbly and uneven, while the melted butter must be fully incorporated for an even texture.
