Fried Sweetbreads

Ingredients

Directions

  1. Place the sweetbreads in a saucepan and cover with lukewarm water. Bring to a boil to blanch them.

  2. Remove the sweetbreads from the water, lay them on a cloth, and gently wipe them. Cut into slices about ½ inch thick, or leave whole if using lambs' sweetbreads.

  3. Fry the sweetbreads as described in the referenced lesson, then serve.
