Why it works: Parsley and carrot match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 8,053 recipes. Both carry 2,4-decadienal, which smells seaweed. The science ↓

Ingredients
Directions
Prepare
Cut the lean meat into small pieces and brown it in a hot frying pan using the marrow from the bone.
Put the bone and fat in a kettle.
Add the cold water and let it stand for 20 minutes.
Place over heat and bring to a boil, removing the scum as it rises.
Add the browned meat.
Simmer and strain
Cover the kettle, reduce heat, and cook at a boil for 5 hours.
Add the prepared vegetables and seasoning, and cook for an additional 2 hours.
Strain the stock immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Shin beef
- Provides meat flavour and body to the stock as it cooks down slowly.
- Bone (in the method)
- Releases gelatin and savoury flavour into the water during long simmering.
- Onion
- Adds sweetness and aromatic depth as it softens and browns in the stock.
- Carrot
- Contributes natural sweetness and a rounder flavour to the finished stock.
The step that matters
Removing the scum as it rises. Scum is coagulated protein and impurities that cloud the stock and can taste bitter. Skimming it as the water comes to a boil keeps the finished stock clear and clean-tasting.
Swap the clove
How well each one fits the dish's main ingredients (beef, parsley, potato, turnip, onion, carrot, celery):
