Beef Loaf

Why it works: Beef and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 18,971 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the mixture

  1. Chop the beef and ham very fine.

  2. Add salt, pepper, cracker crumbs, beaten eggs, and cream. Mix thoroughly.

Assemble the loaf

  1. Grease a bread pan and press half the mixture into it firmly.

  2. Trim each end of the hard boiled eggs to create a flat surface, then place them on top of the mixture in the bread pan, end to end.

  3. Pack the remaining meat mixture on top, pressing it down well.

Bake and serve

  1. Cover and bake in a 350°F (175°C) oven for over one hour.

  2. Uncover and bake for an additional 30 minutes.

  3. Serve hot or cold.

What each ingredient does

Lean beef
Forms the main body of the loaf and gives it its meaty structure.
Eggs
Bind the meat and set during baking to hold the loaf together.
Soda crackers
Absorb moisture and help keep the meat tender and the loaf from drying out.
Cream
Adds moisture and richness, keeping the loaf tender as it bakes.
Raw ham
Adds savory flavor and fat that enriches the meat mixture.

The step that matters

Pressing the mixture firmly into the pan. Packing the meat well removes air pockets and helps the loaf hold its shape when sliced. Gently pressing the hard boiled eggs in place keeps the centre layer even, so slices look uniform.
