Veal Loaf

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the mixture

  1. Chop the veal and pork very fine.

  2. Add the salt, pepper, cracker crumbs, beaten eggs, cream, and boiling water. Mix all together thoroughly.

Bake

  1. Grease an earthenware pan and pack the mixture into it, pressing it down firmly.

  2. Cover and bake in a 350°F (175°C) oven for one hour.

  3. Uncover and bake for an additional 30 minutes.

  4. Serve hot or cold in slices.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean veal
Forms the main body of the loaf, giving it its meaty structure when chopped finely and baked.
Salt pork
Adds fat, which keeps the loaf moist and richly flavoured during baking.
Eggs
Bind the chopped meat together so the loaf holds its shape when sliced.
Soda crackers
Absorb liquid and add body, helping the loaf stay tender rather than dense.

The step that matters

Packing the mixture into the pan. Pressing the mixture down firmly removes air pockets and helps the loaf bind together, so it slices cleanly instead of crumbling.
