Creamed Fish

Oven, in the book's wordsA moderately hot oven

Ingredients

Directions

The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the sauce

  1. Cream the flour and butter together in a saucepan.

  2. Add the mixture to the hot milk and stir well.

  3. Place the saucepan in a double boiler and add the salt, pepper, onion juice, and bay leaf.

  4. Stir until the sauce thickens to the consistency of cream.

Assemble and bake

  1. In a baking dish, layer half of the flaked cold fish and pour half of the sauce over it.

  2. Add another layer of fish and pour the remaining sauce on top.

  3. Sprinkle with bread crumbs and dot with butter.

  4. Bake in a moderate oven at 350°F (175°C) until browned.

What each ingredient does

Cold fish
Forms the body of the dish, providing the main protein and structure in the layers.
Flour
Thickens the butter and milk into a smooth sauce that holds the layers together.
Butter
Adds richness and fat, carrying flavor and helping the top brown.
Milk
Forms the liquid base of the sauce, giving it creaminess and body.
Bread crumbs
Forms a topping that browns in the oven, adding texture and color.

The step that matters

Stir until the sauce thickens. Flour must be fully cooked in the hot liquid to thicken smoothly; undercooked sauce tastes pasty and may stay thin, while overheating or scorching can cause lumps or a burnt flavor.

Swap the white pepper

How well each one fits the dish's main ingredients (fish, milk, onion, butter, flour, bread):

  1. Capersfits better
  2. Nutmegfits better
  3. Cinnamonfits better
  4. White pepperthe original
