Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Thicken the dressing as they cook and set into a creamy, smooth texture.
Butter
Adds richness and fat that gives the dressing a smooth, rounded mouthfeel.
Vinegar
Provides the sharp acidity that defines the dressing's tang.
Milk
Dilutes the mixture and adds moisture and mild richness.
Mixed mustard
Adds sharp flavor and helps emulsify the fat into the dressing.

The step that matters

Pour the egg mixture into the cooled vinegar and butter mixture. The mixture must be cooled before the eggs are added, because eggs scramble when exposed to high heat. Gentle cooking and constant stirring let the egg proteins thicken the dressing evenly.
