What each ingredient does

Green tomatoes
Provide the bulk and tartness that the relish's flavour is built on.
Onions
Add savoury sweetness and aroma that deepen as they cook.
Cabbage
Adds crisp body that holds its texture through the long simmer.
Brown sugar
Adds sweetness and helps balance the sharp vinegar.
Coarse sea salt
Draws water out of the vegetables during the standing period, concentrating flavour.
Vinegar
Supplies acidity that preserves the relish and gives it its sharp taste.

The step that matters

Drain after the 24-hour salt rest. Salt draws out a large amount of liquid from the vegetables. Draining thoroughly before cooking keeps the relish from becoming watery and lets the vinegar and sugar season the vegetables properly.
