What each ingredient does

Lean steak
Supplies the meat juice that is the whole dish, so its lean cut matters most.

The step that matters

Broiling the steak over a brisk fire. Brief, high heat sears the outside and firms the meat while leaving the inside rare and juicy. Overcooking tightens the muscle fibres and squeezes out less juice, so turning frequently keeps the surface from burning before the centre is done.
