What each ingredient does

Sweetbreads
Provide the tender meat that forms the body of the dish.
Cream
Forms the rich base of the sauce and adds moisture and body.
Cornstarch
Thickens the cream into a smooth sauce that coats the sweetbreads.
Butter
Adds fat for richness and a silky mouthfeel in the sauce.
Sherry
Adds acidity and aromatic depth to the cream sauce.
Mushrooms
Add earthy flavour and a soft, meaty texture to the sauce.

The step that matters

Boiling the cream sauce with cornstarch. Cornstarch must be fully boiled to swell its starch granules and thicken the cream. Stopping early leaves the sauce thin and floury-tasting.
