Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Cut off the tops of the peppers.

  2. In a bowl, mix the chopped beef or chicken, tomatoes, mushrooms, bread crumbs, butter, salt, parsley, and onion.

  3. Chop the mixture finely and fry it in butter until cooked.

Fill and bake

  1. Fill the peppers with the mixture, dust with bread crumbs, and place a small piece of butter on top of each.

  2. Bake in a preheated oven at 400°F (200°C) for about 10 minutes.

What each ingredient does

Beef or chicken
Provides the savory, protein-based body of the filling that holds its shape when chopped and fried.
Bread crumbs
Absorb juices and help bind the filling, giving it a softer, cohesive texture.
Tomatoes
Add moisture and a light acidity that brightens the savory filling.
Mushrooms
Contribute moisture and earthy, savory flavor as they cook down in the filling.
Butter
Adds fat for richness and helps the frying and the top crumbs brown.

The step that matters

Fry the filling until fully cooked. The beef or chicken is cold when mixed in, so frying it in butter cooks it through and firms it up. Frying also drives off some moisture so the filling does not make the peppers soggy during baking.

Swap the parsley

How well each one fits the dish's main ingredients (pepper, tomato, beef, mushroom, onion, butter, bread):

  1. Garlicfits better
  2. Thymefits better
  3. Parsleythe original
  4. Celeryfits about as well

Fit is the average pairing score against pepper, tomato, beef, mushroom, onion, butter, bread. Candidates are from the same food group and used in at least 100 recipes.
