What each ingredient does

Chicken livers
Provide the rich, meaty body of the stuffing and brown when fried.
Tomatoes
Act as edible shells that hold the filling and release moisture as they bake.
Fresh bread crumbs
Bind the chopped insides into a stuffing and add a light texture.
Olive oil
Fries the mixture, adding browning and carrying flavour.

The step that matters

Frying the mixture. Frying the chopped livers and bread until lightly browned develops savoury flavour through browning. Cooking them through also keeps the filling safe, since undercooked liver is a food-safety risk.
